Ingredients
| 2 | bn | Asparagus (fresh) |
| 3 | oz | eggs |
| 1 | c | milk |
| 3⁄4 | c | Ritz Crackers (crushed) |
| 1 | c | Cheddar Cheese (shredded) |
| 1 | Pimentos, drained (small jar) |
Instructions
Clean asparagus. Cut into 1-inch pieces and cook until crisp tender; drain.
In a bowl, beat eggs with milk. Add Ritz crackers, cheese, and Pimentos. Salt and Pepper to taste.
Put drained asparagus into the bottom of a greased 2-quart casserole dish, then add egg mixture. Drizzle 2 Tablespoons of melted butter over the top. Bake at 350 degrees for 30 minutes.
