Description
Welcome Spring with one of the first springtime vegetables that is both pretty and very tasty.
Ingredients
| 1 1⁄2 | lb | fresh asparagus spears (trimmed) |
| 2 | T | Vegetable Oil |
| 1⁄4 | c | sweet red pepper (thinly sliced) |
| 1⁄4 | c | walnuts (coarsely chopped) |
| 1⁄4 | t | ground ginger |
| 1 | garlic clove (minced) | |
| 1⁄8 | t | red pepper flakes (crushed) |
| 2 | T | Chicken Broth |
| 2 | T | Soy Sauce |
| 1⁄2 | t | sugar |
Instructions
In a skillet or wok, stir-fry asparagus in oil until crisp-tender; about 10 minutes. Remove and keep warm.
In the same skillet, stir-fry red pepper, walnuts, ginger, garlic and pepper flakes for 2 minutes or until red pepper is crisp-tender.
Stir in the broth, soy sauce, and sugar and heat thoroughly.
Add asparagus, stir to coat.
