Description

Welcome Spring with one of the first springtime vegetables that is both pretty and very tasty.

Ingredients

1 1⁄2lbfresh asparagus spears (trimmed)
2TVegetable Oil
1⁄4csweet red pepper (thinly sliced)
1⁄4cwalnuts (coarsely chopped)
1⁄4tground ginger
1 garlic clove (minced)
1⁄8tred pepper flakes (crushed)
2TChicken Broth
2TSoy Sauce
1⁄2tsugar

Instructions

In a skillet or wok, stir-fry asparagus in oil until crisp-tender; about 10 minutes. Remove and keep warm.
In the same skillet, stir-fry red pepper, walnuts, ginger, garlic and pepper flakes for 2 minutes or until red pepper is crisp-tender.
Stir in the broth, soy sauce, and sugar and heat thoroughly.
Add asparagus, stir to coat.
