Description
A very healthy and tasty soup and only 155 calories per bowl.
Ingredients
| 2 | large cucumbers (peeled, seeded, chopped, cut lengthwise) | |
| 1 | avocado (small and ripe) | |
| 1 | clv | garlic (peeled) |
| 2 | t | lemon juice (freshly squeezed) |
| 4 | c | chicken stock |
Notes
Can also add 1/4 teaspoon of chopped mint leaves for garnish, if desired.
Instructions
In a blender, process the garlic. Add the avocado, cucumbers, lemon juice and the chicken stock. Cover blender and puree until smooth.
This soup is best served cold.
