Description

A very healthy and tasty soup and only 155 calories per bowl.

Ingredients

2 large cucumbers (peeled, seeded, chopped, cut lengthwise)
1 avocado (small and ripe)
1clvgarlic (peeled)
2tlemon juice (freshly squeezed)
4cchicken stock

Notes

Can also add 1/4 teaspoon of chopped mint leaves for garnish, if desired.

Instructions

In a blender, process the garlic. Add the avocado, cucumbers, lemon juice and the chicken stock. Cover blender and puree until smooth.
This soup is best served cold.
