Description
This is a little different but very easy to make and quite tasty. Try it! I like grilled cheese sandwiches to go with it.
Ingredients
| 2 | Leeks (sliced, white parts only) | |
| 2 | T | butter |
| 1 | lettuce (large romaine head, chopped) | |
| 2 | c | Chicken Broth |
| 10 | oz | frozen peas (1 pkg) |
| 1⁄2 | c | fresh mint (chopped) |
Instructions
In large pot, cook leeks in butter until soft; add lettuce (reserve some for topping) and cook for about 2 minutes. Stir in broth, 1-1/2 cups water and peas; bring to simmer for 5 minutes. Stir in mint; season with salt and pepper. Puree in blender.
