Roasted Beets with Feta

Description
Beets are slowly roasted to perfection and topped with a generous dose of creamy feta cheese.
Ingredients
| 12 | beets (cleaned but not stemmed ) | |
| 8 | oz | feta cheese (crumbled) |
| 3 | T | Olive Oil |
| 2 | t | kosher salt |
| 2 | ds | fresh ground pepper |
Instructions
Turn ovent on to 375. Wash beets and blot with paper towels. Place beets on a baking sheet and drizzle liberally with olive oil. Roast 1 hour. Remove from oven and let cool for 15 to 20 minutes. Sprinkle with feta cheese, salt and pepper to tast.
